A good meal

I attended a dinner party this week at my friend LouAnn's house. The intent was to eat dinner and watch the women's NCAA tournament (my Texas Longhorns got absolutely crushed by Connecticut, but the evening was fun regardless!).

I helped Lou make the dinner, and I thought I'd share the menu in case anyone is looking for something to try. It's pretty easy, but quite yummy. We got rave reviews from everyone who attended.

Chili Rubbed Flank Steak

1 1/2 lb flank steak
1 T chili powder
1 t salt
1/4 t pepper
1 t olive oil

Combine the spices, mixing well. Using a fork, stab the flank steak a few times. Coat both sides of the steak with the olive oil, and then rub the spice mixture all over it. Let sit for at least 30 minutes so the flavor gets absorbed into the steak. Broil (not bake!) for 10 minutes without turning for medium rare. Let sit 3-5 minutes, then slice very thinly and serve. Serves 2-4.

Herbed Basmati Rice

2 t margarine (I use real butter)
2 garlic cloves, minced
1/2 cup uncooked basmati rice (jasmine rice works too)
1 cup water
1/4 t salt
2 T thinly sliced green onions
2 t minced fresh basil (dried works too, but fresh is always better!)
1 t minces thyme (same comment as above)
2 T grated fresh parmesean cheeese
2 T toasted pine nuts

Melt butter in small saucepan over medium heat. Add garlic and saute 1 minute. Add rice, stir well. Add water and salt, bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Stir in green onions, basil, and thyme. Sprinkle with pine nuts and cheese and serve. Serves 3-4.

Stawberry Spinach Salad

organic baby spinach
organic romaine lettuce
blue cheese crumbles
salted almonds
sliced mushrooms
sliced strawberries
Kraft Organic Raspberry Dressing

Add whatever quantities of each ingredient you want, and add the dressing just before serving.

I suggest a nice red wine to accompany the meal, but that is of course optional.

You know I love that basmati rice. I've cooked it several times. And really - you don't turn the meat? I'll have to try it.

Gwenn, I know you're a fan of the Two Buck Chuck (as am I), so that would certainly work, but if you want to upgrade a little, I like Bogle Merlot. It's about $8 I think. Or... for about $14, I really like Louis M. Martini Cabernet.
